And if you’re not yet the hummus connoisseur, you’re about to be! 

There’s no need for a food processor when you make these delightful veggie burgers! Just mash all the ingredients together and you’ve got a supremely tasty burger that will satisfy the hungriest of diners. What’s better than delicious, vegan and gluten free? Delicious, vegan, gluten free and EASY!

Vegan Hummus & Chickpea Burger

A deliciously simple vegan and gluten free veggie burger!

Ingredients

  • 1 cup rolled oats not quick cooking
  • 1/2 cup cooked chickpeas
  • 1/3-2/3 cup prepared hummus homemade or store-bought
  • 1/4 cup finely diced yellow onion
  • 2 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp ground cumin
  • 1/8 tsp cayenne pepper
  • 1/2 tsp kosher salt
  • 1/8 tsp fresh ground black pepper
  • 2 tbsp olive oil

Instructions

  • Add all ingredients except olive oil to medium bowl, starting with 1/3 cup hummus.
  • Using a fork or potato masher, mix all ingredients together, mashing chickpeas as you go (leave some whole for texture).
  • If the mixture isn't holding together, add more hummus. You want the mixture to hold together easily when squeezed, but not too wet.
  • Divide the burger mixture into fourths. Using your hands, form four patties about 4 inches across. I like my patties thinner, so they crisp up and cook thoroughly faster.
  • Heat a large saute pan over medium heat. When hot enough, add the oil. When the oil is hot, add the burgers. They should sizzle when they hit the pan.
  • Cook on each side for 3-4 minutes until golden brown.
  • Serve immediately on a Columbia Gorge Bakery gluten free hamburger bun. 🙂
