Happy Holidays from all of us at Columbia Gorge Gluten Free! It’s that time of year again. Time for wreaths, Christmas trees and gingerbread houses. This year, because – let’s face it – it’s hard to find a gluten free gingerbread house kit, I decided to get creative and make my own! With some geometry and a little…bordering on a lot of “gingerbread house glue” it was a success!
I made my own gingerbread house pattern and used skittles and spice drops for decoration, but here are a couple of websites with great ideas and free house patterns if you just want to print one out and get started: www.remodelaholic.com, www.recipelink.com & meinlilapark.blogspot.ch.
Gluten Free Gingerbread House
Gluten Free Gingerbread and Icing Recipes!
- 1 and 1/2 cup and 1 tbs of butter
- 1 cup granulated sugar
- 1 tsp salt
- 1 tsp cinnamon
- 1 tsp ginger
- 1 tsp ground cloves
- 3/4 cup molasses
- 2 tsp vanilla
- 3 3/4 cups of 1:1 gluten free flour
For Icing
- 4 cups powdered sugar
- 1 tablespoon corn syrup
- 2 tbs water (add more if needed)
- 1 tsp vanilla extract
- A couple of drops of food coloring if desired
For Decorating
- Assorted candies
- Place butter in mixer and mix on low speed and cream until smooth.
- Add the sugar, salt, spices and molasses and mix on med-low until fluffy, about 2 mins.
- Scrape down sides, add vanilla and mix on low until mixed well.
- Add the flour in 4 additions, mixing on low speed for about 15 to 30 seconds. Scrape bowl and mix until all flour is incorporated.
- Mound the dough and split into two balls.
- Wrap in plastic wrap and chill for one hour.
- Postion rack to middle of oven and preheat to 325 degrees.
- Line 2 to 3 baking sheets (depending on gingerbread house pattern) with parchment and set aside.
- Unwrap dough and on a well floured surface, roll dough out to 1/8 inch thick.
- Line up your patterns and “trace” with a butter knife.
- With a parring knife cut out your house pieces and place on baking sheets.
- Bake until golden brown for about 10 to 15 minutes.
- Turn pan halfway through baking.
- Cool house pieces completely before assembling house.
For Icing
- Mix the powdered sugar, corn syrup and water in a mixer until smooth. Add water until you get the desired consistency. You want it pliable, but not runny. Add more powdered sugar if you add too much water.
