Gluten Free Pineapple Coconut Scones

With summer officially over and the school year in full swing, I'm already missing our beach trips and lazy river days. Fortunately, I can close my eyes while eating these pineapple coconut scones and imagine hot, sunny, summer days at least for a moment... Gather all of your ingredients and mix the coconut flour and almond flour together. Mix in the sugar, baking powder and salt. Add the shredded coconut, yogurt, milk, pineapple, eggs, coconut oil, and the coconut extract (for [...]

Gluten Free Pierogi

I love this time of year. With my tomato and pepper starts planted, my house is transformed from a deep winter bunker into a springtime botanical garden. The days are getting longer and my german-polish roots have me looking forward to Easter dinner and the pierogies that accompany that meal! And yes, although I know I have my polish ancestors shaking their heads disapprovingly when I use the term “pierogies” (the plural of pierogi is pierogi and the singular actually [...]

Gluten Free Peanut Butter Fudge Brownies

Initially, I wanted to call these, Leave-Me-Alone-These-Are-Mine Bars, but that seemed rude. When finally, I could use my words again and was willing to share, my family and I agreed that that we would be making these again ASAP! What could be better than an amazingly chocolaty, perfectly chewy brownie paired with a fudgy peanut butter-y layer (think reese's peanut butter cups) and topped with even more chocolate? Nothing. Except maybe that it's also gluten free! A quick note on the brownie [...]

Gluten Free Gingerbread Cookies

Christmas isn't Christmas without decorating cookies! This year I've slowly been converting all my favorite childhood recipes to gluten free versions and this Christmas gingerbread cookies were on the list. We rolled these out to about an 1/8 of an inch thick and decorated with royal icing. The great thing about this recipe is that the dough is firm and easy to work with and the cookies hold their shape beautifully while being baked! Enjoy! In a pinch a plastic sandwich bag works [...]

Gluten Free Gingerbread House

Happy Holidays from all of us at Columbia Gorge Gluten Free! It's that time of year again. Time for wreaths, Christmas trees and gingerbread houses. This year, because - let's face it - it's hard to find a gluten free gingerbread house kit, I decided to get creative and make my own! With some geometry and a little...bordering on a lot of "gingerbread house glue" it was a success! I made my own gingerbread house pattern and used skittles and spice drops for [...]

Gluten Free Pumpkin Nutella Bars

I’ve been on a pumpkin dessert kick lately and with the great pumpkin shortage of 2015 behind us (or is it?)…I decided to continue on my merry way. I’ve always been a fan of pumpkin pie and am continually trying out new gluten free pie crust recipes (as witnessed by the amount of pie crust pins on my pie crust Pinterest board), but this week I wanted to try something different. After all, pumpkin pie isn’t super portable in lunch bags and [...]

Gluten Free Bread Pudding with Peaches

Peach season is here! With friends visiting and the good sense to realize that one shouldn't only eat peaches over the sink (at least not without offering some), I've been on the lookout for great gluten free peach-filled recipes. I knew I wanted to make bread pudding and I knew I wanted to make it with peaches. Now, all I had to do was decide between bread pudding with grilled peaches and a bourbon glaze or a vanilla caramel sauce. In the [...]

Gluten Free Strawberry Balsamic Tarts

This week, I had the wonderful opportunity to not only be introduced to a brand new swimming hole, but to be invited to pick fresh strawberries from a friend’s garden. Both were hidden treasures, to be sure. Normally, I would hull my strawberry haul and pop them into the freezer to add to our morning smoothies, but after thinking about it for all of 5 seconds, I just couldn’t do it. They were too fresh, smelled too good and after all, [...]

Gluten Free Oatmeal Lace Cookies

With the weather being what it is in our little pocket of the Pacific Northwest, flip flopping between gorgeous sunny days and monsoon like deluges, the torrential downpour days have me wanting to crawl back into my jammys and sit by the fire. Needless to say, this weather has me craving comfort food and conveniently enough, it’s National Oatmeal Lace Cookie Day. Problem solved! Though I rarely need an excuse to make oatmeal cookies, these are a little different than [...]

Gluten Free Chocolate Cream Cheese Cupcakes

One of our chocolate-y contributions to the Lyle Chocolate Festival this year was a heavenly cream cheese filled chocolate cupcake confection. I couldn't resist experimenting with this recipe that an old friend had given me years ago. She had grown up with her mother making this homemade, Ding-Dong-like bite of deliciousness and it tasted just as good gluten free as I remember. Enjoy!
